doctor warns: „i threw away every pan in my kitchen – after i discovered this.”

After 18 years in internal medicine, a doctor from Bristol began to notice a striking pattern. When her own mother developed health concerns, she started looking more closely at the possible impact of everyday chemicals. What she discovered changed the way she viewed an object that almost all of us use every day: the frying pan in our kitchen.

CAMBRIDGE – “I've worked in internal medicine for nearly twenty years,” says Dr Sarah Williams (54), a consultant physician in Cambridge. “But it wasn't until my own mother became ill that I started paying closer attention to the chemicals we're exposed to in everyday life.”

Dr Williams, who prefers to use a different name for privacy reasons, says she became increasingly interested in how environmental exposures can affect long-term health and wellbeing.

As public awareness of PFAS and other persistent chemicals has grown, she began looking more closely at the products people use every day – including the cookware found in most kitchens.

“Many people never think about what's in the coating of a frying pan,” she says. “They're focused on whether it cooks well or is easy to clean. Increasingly, however, consumers are also asking questions about the materials used and how long those materials remain in their homes.”

“The blood test results were normal. Scans showed nothing unusual. We often had to send these patients home with the words, ‘We can't find anything wrong.’ Yet their symptoms didn't simply disappear.”

Two years ago, her 78-year-old mother fell ill. The complaints were remarkably similar: extreme fatigue, shortness of breath and recurring dizziness. Once again, the usual studies did not provide a clear explanation.

„As a daughter you react differently than as a doctor, she says. „I didn't want to accept that there was no answer. That's why I started looking further.”

The discovery: what can accumulate in our bodies

Dr Williams's research led her to a topic that has been discussed for years within environmental health science, yet remains unfamiliar to many consumers: PFAS (per- and polyfluoroalkyl substances).

These synthetic chemicals are used in a wide range of products, including some types of non-stick cookware. They are valued for their water-, grease- and stain-resistant properties. Because many PFAS compounds break down extremely slowly, they are often referred to as "forever chemicals".

“I began reviewing the available research and reports,” says Dr Williams. “Time and again, I came across studies from health authorities and scientific organisations examining the presence of PFAS in the environment and in human populations.”

Scientists around the world have been studying PFAS for many years. Research continues into the potential effects of long-term exposure to certain PFAS substances, including possible impacts on the immune system, cholesterol levels and other aspects of health.

As awareness of PFAS grows, more consumers are taking a closer look at the materials used in everyday products – including the cookware they use in their kitchens.

⚠️ What Are PFAS?

PFAS (per- and polyfluoroalkyl substances) are a group of thousands of synthetic chemicals that have been used since the 1950s in a wide range of products, including some non-stick coatings, water-resistant fabrics and food packaging.

Because many PFAS compounds break down extremely slowly in the environment, they are often referred to as "forever chemicals". As a result, regulators and researchers around the world are paying increasing attention to their use and long-term environmental impact.

The European Chemicals Agency (ECHA) has proposed further restrictions on many PFAS substances, while several U.S. states have already introduced measures affecting the use of PFAS in certain consumer products, including some types of cookware.

As awareness of PFAS continues to grow, many consumers are choosing to learn more about the materials used in the products they bring into their homes.

„When I understood what exactly PFAS are, I was the first to see which pan my mother cooked with,” she says. „Just a standard non-stick pan. She had been using the same pan for over a decade. The coating was full of scratches and started to peel off in some areas. At that moment I decided to get rid of him. Shortly afterwards I also replaced the rest of my old pans.”

The frustrating search for an alternative

What followed, Dr Williams describes as “a long search for a better solution.”

After researching PFAS and alternatives to traditional non-stick coatings, she began looking for a frying pan that was practical, durable and easy to use in everyday life.

Ceramic pans?

"I tried several. They worked well at first, but over time the non-stick performance noticeably declined. Eventually, I found myself replacing them."

Cast iron?

"Extremely durable, but also quite heavy for many people. It requires regular maintenance and a bit more attention while cooking."

Stainless steel?

"A solid material with many advantages, but it takes practice to master. Without the right technique, food can stick more easily, which often leads people to use more oil or fat than they'd prefer."

After months of comparing different options, she kept coming back to the same question:

Was there a frying pan that could combine durability, ease of use and long-lasting performance — without relying on a traditional non-stick coating?

“I'm a doctor. After learning more about PFAS and the materials we use in everyday products, I wanted to find a frying pan that was both practical and built to last. To my frustration, many of the alternatives came with their own drawbacks.”

The breakthrough: medical titanium in the kitchen

The solution came to Dr Sarah Williams through an unexpected route. During a conference, she struck up a conversation with a specialist in material safety, who pointed her towards a relatively unknown alternative.

“He told me about a company that makes a frying pan from pure medical-grade titanium,” she explains. “What immediately caught my attention was that the non-stick effect didn't come from a coating, but from a surface inspired by the lotus leaf effect.”

“That's exactly what makes it so special,” she continues. “Virtually all traditional non-stick pans rely on a coating. And every coating eventually wears out. With this pan, the cooking surface is made from solid titanium with a specially engineered microstructure. There is no layer that can peel, flake or wear away.”

Even so, she remained cautious.

“As a doctor, I'm naturally sceptical. When something is presented as the solution to everything, I want to see the facts first.”

That is why she decided to look more closely into the material itself.

“I began studying the scientific literature on titanium. The same material has been used for decades in medical implants, dental applications and other situations where reliability is essential. That gave me a great deal of confidence in the properties of the material itself.”

The practical test: how does the pan perform in daily use?

Dr Williams ordered a titanium frying pan with a 30 cm diameter and a 7.5 cm depth.

“The size is perfect,” she says. “It's just as suitable for cooking a couple of eggs for breakfast as it is for preparing a large vegetable dish for the whole family. Thanks to its depth, you can use it not only as a frying pan, but also for sauces, one-pot meals and slow-cooked dishes. I've even made pasta sauces and casseroles in it.”

“And because titanium is naturally lightweight despite its exceptional strength, my 78-year-old mother can handle the pan with ease. She uses it every day.”

The results exceeded her expectations.

“We cracked an egg into the pan with just a few drops of oil. It released effortlessly. My mother now cooks potatoes using far less oil than she used to. For someone who pays close attention to maintaining a healthy lifestyle, that's a real benefit.”

“I'm not here to sell anything. I'm a doctor who came across a product that genuinely impressed me. It gave my mother confidence and made me look differently at the cookware we use every day.”

Why your doctor never asks you about your pans

Dr Williams believes that consumers are becoming increasingly interested in the role everyday products play in their lives.

“Medical professionals are trained to diagnose and treat symptoms based on the available evidence,” she explains. “At the same time, there is growing interest in how long-term environmental exposures may affect overall health and wellbeing. It's a complex area that researchers continue to study.”

“Most people rarely think about the materials used in the products they interact with every day,” she continues. “When buying cookware, for example, we're usually focused on performance, convenience and price. Only recently have more consumers started asking questions about coatings, materials and long-term durability.”

“Research into PFAS and other persistent chemicals is continuing around the world,” she says. “That's why I believe it's important for people to be informed about the products they bring into their homes and use every day.”

I replaced all of my old non-stick pans after reading this article. I've now been cooking with titanium for six weeks, and I can relate to much of what is described here. A fried egg with hardly any oil, and cleaning is often as simple as wiping the pan with a cloth. Looking back, I wish I had made the switch much sooner.

As a chemist, I can confirm that PFAS have been the subject of extensive scientific research for many years. Reports from organisations such as ECHA are publicly available for anyone who wishes to learn more. After looking into the topic in greater detail, our family made a conscious decision to switch to an alternative that does not rely on a traditional non-stick coating.

At first, we hesitated because of the price. But when we sat down and worked it out, we realised that over the past 15 years we'd probably bought eight different non-stick pans. In the end, that adds up to quite a lot. A titanium pan is designed to last for years – and you can tell. Solidly built, yet surprisingly lightweight and easy to handle.

As a mechanical engineer, I looked into the material properties before placing my order. The certification of medical-grade titanium and the technology behind the lotus leaf effect are both well documented. That gave me confidence that this was more than just clever marketing. The delivery was quick as well – the pan arrived within four days.
